Lemon Vinaigrette Salads

My latest favorite book pickup - Salad in a Jar, by Anna Baxter - writes about simple jar lunch salads, and i wanted to break them out by the type of dressing, since that is how i would use it. Id make a large batch of dressing and make lunches for two all week.

Makes: 2/3 cup Dressing. Seal jar and shake vigorously.

Ingredients:

• 2 tsp dijon mustard

• 1 tsp lemon zest

• 3.5 Tbs lemon juice

• 7 Tbs EVOO

• 1 small clove garlic, very finely chopped

• Sea salt flakes and freshly ground black pepper
