Tahini Zinger Salads
My latest favorite book pickup - Salad in a Jar, by Anna Baxter - writes about simple jar lunch salads, and i wanted to break them out by the type of dressing, since that is how i would use it. Id make a large batch of dressing and make lunches for two all week.
Makes: 1/2 cup Dressing. Seal jar and shake vigorously.
Ingredients:
2 Tbs tahini
1 oz piece of ginger, peeled and finely grated
1 clove garlic, finely grated
2 Tbs lemon juice
2 tsp maple syrup
1 Tbs EVOO
Sea salt flakes and freshly ground black pepper
