Three Cheese Spinach Cauli Pizza

Ingredients (for the toppings, instructions for crust below).

  • 1 [5 oz] box of spinach

  • 1 TBSP butter

  • 1 clove garlic, smashed and minced

  • 1/4 cup heavy cream, room temperature

  • 1/4 cup freshly grated parmesan cheese

  • 1/8-1/4 tsp salt, to taste

  • 1 garlic naan flatbread (cauli crust instead)

  • 2 oz mozzarella cheese, grated

  • 2 tbsp feta cheese, crumbled

  • 1-2 tsp pesto

  • a pinch of red pepper flakes, for topping

Instructions

  1. Pre-heat oven to 350 degrees F.

  2. Chop spinach and mince garlic.

  3. Heat a deep pan to medium-high heat with 1 TBSP butter.

  4. Add garlic and spinach and sauté until wilted.

  5. Add heavy cream, parmesan, and salt and reduce heat to simmer, stirring frequently to thicken for about 5 minutes. Remove from heat and allow to cool slightly.

  6. Spread spinach mixture onto your flatbread and top with mozzarella and feta cheese.

  7. Drizzle with pesto and bake on a foil lined baking sheet at 350 for 12 min.

  8. Change oven setting to broil for an additional minute or two, until golden and bubbly.

  9. Top with red pepper flakes and enjoy!

Notes

No fresh spinach? No problem! If you have creamed spinach squirreled away in your freezer it makes a fantastic base! Frozen chopped spinach will work too; simple squeeze it dry first and mix it with a dash of cream and a sprinkling of parm cheese. Whichever route you take, Popeye is sure to be proud!

To serve a crowd, this recipe easily doubles, triples, or quadruples. Have a quick and easy flatbread pizza party with friends or family and let everyone choose their toppings!

To make the cauli crust:

Ingredients:

  • Cauliflower ( whole head or pre- riced, fresh or frozen )

  • 2 eggs

  • 1/4 c parmesan (opt)

  • 2 garlic cloves

  • Fresh herbs: thyme, oregano

  • Salt and pepper

  • toppings! BLT here: spinach, tomatoes, garlic aioli and bacon!

Directions

  • Start with premade crust, or make your own.

  • Preheat oven to 450F.

  • If using fresh cauli, chop it into big chunks, discard stems. Break pieces into a blender, fill with water, and pulse a few times (up to 10x max). Once minced, place a cheese cloth over a colander. Squeeze excess.

  • Spread the cauli rice (frozen or just minced) over parchment in a sheet pan, and bake for 10 min

  • While cooking, chop any desired veggie toppings

  • Let the cauli rice cool, then add to a mixing bowl with 2 eggs, parm, herbs, cayenne, garlic, etc.

  • Press into the sheet pan on parchment into a pizza shape for the crust, and bake 20 min or so.

  • Add any toppings, and bake again if need to melt any additional cheese or toppings.
