Carrot Top Pesto

INGREDIENTS

  • 3 cups carrot tops (approx 6-8 carrots)

  • 1 cup basil, or any green you have on hand (cilantro, salad, etc)

  • 3-4 cloves garlic

  • 1/2 cup pine nuts (or walnut, or any nut)

  • 1/2 cup grated parmesan cheese (optional)

  • 1 lemon, zest and juice

  • 1/2 - 3/4 cup of extra virgin olive oil

  • Salt and pepper

INSTRUCTIONS

1 In a skillet over medium heat, roast nuts until browned

2 Place all greens, nuts, cheese and garlic in food processor

3 Pulse until finely chopped

4 With processor running, drizzle in oil to desired consistency

NOTE:

Please use organic, locally sourced ingredients when ever possible
