Sugar Free Gummies!
Applesauce is perfect for gummies — it adds natural sweetness, a smooth texture, and helps the gummy set up nicely. Here are some new combos it unlocks:
🍎🌺 Applesauce Hibiscus Gummies
Tart, floral and a gorgeous deep pink!
1/2 cup applesauce
1/2 cup water
2 tbsp lemon juice
1–2 tsp hibiscus powder
Stevia to taste
4 tbsp gelatin
Mix everything together cold
Sprinkle gelatin on top → wait 2 min (this is "blooming")
Gently heat just until gelatin melts into the liquid — about 2–3 minutes on low heat, stirring constantly
You're not cooking anything — just warming enough to dissolve the gelatin
Don't boil it — boiling can break down gelatin and your gummies won't set properly
Pour into molds immediately
Fridge to set
No-Blender Method
Whisk everything together in a heatproof bowl or saucepan
Applesauce, water, lemon juice, stevia, any powders (hibiscus, etc.)
Bloom the gelatin — sprinkle it over the mixture and wait 2 minutes
Heat on the stove over low-medium heat, stirring until gelatin fully dissolves (2–3 min)
Pour into molds and refrigerate until set

1/2 cup applesauce
1/2 cup water

💡 Applesauce Pro Tips
Unsweetened applesauce is ideal for sugar-free goals
It acts as a natural binder, so your gummies may be slightly softer and more jelly-like — which many people prefer!
You can reduce water slightly when using applesauce since it already adds moisture
Works great as a base in almost any of the previous recipes — just swap half the water for applesauce!

Alternatives:
I love throwing a batch together to keep in my fridge for easy snacking all week!
First, brew your tea. (If you’re using pre-made liquid, like fruit juice, skip to step 3)
Steep tea bags in hot boiling water for about 6 minutes.
Squeeze the tea out of the tea bags, then discard the bags.
Pour one cup of tea into a small sauce pan on the stove.
Next, add the gelatin and pour the gummies.
Whisk the gelatin and sweetener into the sauce pan.
Heat and stir the gelatin mixture over medium heat until the liquid is thin and there are no gelatin clumps.
Remove the sauce pan from heat and stir in the fruit extract.
Pour the liquid into silicone molds.
Place the molds in the refrigerator for at least 15 minutes to set.
Ingredients
0.3 oz packet of sugar free jello, any flavor
1 envelope unflavored powdered gelatin, 1 envelope = 0.25 oz/7.4g
¼ - ⅓ cup cold water
Instructions
Add all three ingredients to a small saucepan, stir well, and cook over a low heat.
Cook until all the granules have dissolved - approx 2-3 minutes.
Use a jug, squeeze bottle or a spoon to carefully pour the mixture into a silicone mold.
Place the filled mold on something firm like a small chopping board (to stop the mold twisting). Let the jello cool then place in the fridge for 30-40 minutes until set.
Variations
Make sour gummy bears. Add 1-2 tablespoons of a sugar-free powdered drink mix, like Kool-Aid. If I go this route, I like to toss the bears in granulated sweetener.
Give them a health boost. Add 1-2 tablespoons of a sugar-free electrolyte mix (like sugar-free Liquid IV) or unflavored collagen. I made electrolyte gummies the other day and I SWEAR my headache immediately disappeared!
Make apple cider gummies. Swap ⅓ of the water for raw apple cider vinegar. I find this gives them a more tart flavor–and it helps alleviate nausea and stomach problems.
Add natural extracts, like lemon extract or vanilla extract, for added flavor.
Make them vegan. Swap the gelatin for agar agar and refer to the directions on the box for instructions on how to use it.
Adjust the sweetness. Taste the gummy bear mixture and add granulated sweetener (I prefer allulose) until it suits your taste buds.
Let them chill overnight. If possible, I find letting the bears firm up overnight yields the best texture.
