Brownie Cookies

  • 1 ½ cups white chocolate, melted

  • pink or blue oil-based food coloring

    Cookie dough:

  • 170g unsweetened chocolate, chopped

  • 2 cups dark chocolate chips

  • 1 cup unsalted butter, cold and cut into cubes

  • 6 large eggs

  • 2 ¼ cups granulated sugar

  • 1 1/2 cups flour

  • 2/3 tsp baking powder

  • 1/2 tsp salt

  • 1 ½ cups chocolate chips

    Directions

    1. Dye the white chocolate pink or blue with the oil-based food coloring. Pour into small 1” silicone molds and place in the freezer until ready to use.

    2. Place the unsweetened chocolate, 2 cups dark chocolate chips and butter into a pot set to medium-low heat, and stir until everything is melted. Then remove the pot from the heat.

    3. Place the eggs and sugar in a bowl and whisk on high with an electric mixer until it forms a ribbon when lifted, about 3 minutes.

    4. Add the chocolate mixture to the eggs and sugar while whisking. Sift the flour, baking powder and salt into the bowl and mix just until everything is combined. Fold in the 1 ½ cups chocolate chips. Chill the dough in the fridge for 1 hour.

    5. Line a baking sheet with parchment paper. Place a small dollop of batter onto the paper, press a pink or blue chocolate on top, then place about 1 ½ tbsp of dough on top. Smooth the dough around the chocolate to seal it in.

    6. Bake at 350F for 10-12 minutes. Allow the cookies to cool for 1 minute, then transfer them to a cooling rack to finish cooling. Enjoy!

DOUBLE CHOCOLATE

½ cup unsalted butter, room temperature

  • ½ cup granulated sugar

  • ½ cup dark brown sugar, packed

  • 1 large egg

  • 2 teaspoons vanilla extract

  • 1 cup all-purpose flour

  • ½ cup unsweetened dark cocoa powder (regular works too)

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

  • 1 cup semi-sweet chocolate chips

  • blue or pink candy melts (36)

INSTRUCTIONS

  1. Line 2 baking sheets with parchment paper or silicone baking mats. Set aside.

  2. In the bowl of an electric mixer, combine the butter and sugars. Beat together on medium speed until light and fluffy, about 2 minutes. Blend in the egg, and vanilla. Scrape down the bowl if needed.

  3. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Slowly add the dry ingredients into the wet ingredients in the mixer on low speed just until incorporated. Fold in the chocolate chips.

  4. Either chill all the dough in the fridge for at least an hour then roll into balls or you can roll dough into balls first then chill. Roll 2 tablespoons of dough into balls. Break off a little less than half off of the top, flatten out the bottom and in the middle add 2 of the candy melts, on top of each other with the flat sides touching, then cover with top part of the cookie dough and roll into a ball making sure you can't see the candy melts.

  5. When ready to bake, preheat the oven to 350˚ F.

  6. Place the cookie dough balls on the baking sheets. Top each cookie dough ball with a little more chocolate chips.

  7. Bake 8-9 minutes. Let cool on the baking sheets for about 5 minutes, then transfer to a wire rack to cool completely
