3 Ingredient Cookie Sandwiches

For the cookie:

  • 1/2 cup smooth almond butter

  • 1/3 cup maple syrup

  • 3/4 cup oat flour

For the filling:

  • you can use just nut butter,

  • or, combine 1/3 cup creamy dairy free yogurt and 1/4 cup nut butter to make creamier

Directions:

  • Preheat oven to 350

  • Mix the nut butter and maple syrup.

  • Add the oat flour and mix to make your dough.

  • Roll out the dough into even sized balls (about 1 tbsp sized) I made about 26!

  • Flatten each dough ball gently using a fork both ways to make the lines on top. Bake 15 minutes, cool, and turn into sandwiches! So easy 🤗
