BLT Cauli Pizza!
BLT Cauli Crust Pizza
with Artichokes and Ghost Pepper Aioli
This actually came together really easily. Make the crust, (frozen or from scratch).
While crust is baking, cook the bacon (around 400 works), and cook down any veggies on the stove top. I love to use garlic and mushrooms and onions, but this time kept it to what I had on hand. Spread on a thin layer of this ghost pepper aioli sauce, or some other favorite sauce, preferably more creamy if you want to keep the BLT thing going (maybe a chipotle mayo?? <3) Once the crust is baked to the level you like, layer on the toppings.
I put on some spinach, tomatoes, artichoke hearts, and that bacon!
I think this was my favorite pizza yet! Both in color and taste. 🥰
Ingredients:
Cauliflower (whole, or frozen already riced)
2 eggs (3 if super big cauli)
1/4 c parmesan (or other nut cheese)
1-2 garlic cloves
Herbs (thyme, oregano, basil)
Salt and pepper
minced peppers
parchment paper for baking
any toppings! For this one, I used , spinach, garlic pepper aioli and bacon!
Steps:
Start with premade crust, or make your own.
Preheat oven to 450F.
If using fresh cauli, chop it into big chunks, discard stems. Break pieces into a blender, fill with water, and pulse a few times (up to 10x max). Once minced, place a cheese cloth over a colander. Squeeze excess.
Spread the cauli rice (frozen or just minced) over parchment in a sheet pan, and bake for 10 min
While cooking, chop any desired veggie toppings
Let the cauli rice cool, then add to a mixing bowl with 2 eggs, parm, herbs, cayenne, garlic, etc.
Press into the sheet pan on parchment into a pizza shape for the crust, and bake 20 min or so.
Add any toppings, and bake again if need to melt any additional cheese or toppings.
For many things in life, you have to pay in order to enjoy the rewards. Consider cooking: while putting the effort and time to cook, you are paying the price to sit down and eat and enjoy the rewards. In parallel, it’s like working out, afterwards feeling healthier and fitter, sharper of mind.
The hack, or trick, is to learn to love the payment. Whether it’s “I enjoyed cooking this meal” or “I loved this run,” you are benefitting on both sides. There’s no work anymore.
