GF Strawberry Muffins

INGREDIENTS

Dry

Wet

  • 4 tablespoons unsalted butter (or ghee), melted and cooled

  • 1/4 cup yogurt , whole milk (or coconut cream)

  • 2 large eggs

  • 1/2 teaspoon vanilla extract

Mixed at end

  • 3/4 cup chopped strawberries (fresh or frozen)

INSTRUCTIONS

  • Begin by melting the butter so it has time to cool before mixing with the other ingredients.

  • Line standard-size muffin cups with paper liners or grease with nonstick cooking spray.

  • In a large bowl whisk gluten-free flour, baking powder, and salt.

    • In a small bowl whisk cooled butter, yogurt, eggs, and vanilla.

    • Gently combine, then preheat oven to 375°F while GF flour sets with the wet ingredients

  • Distribute the batter between the muffin cups. If desired, use slightly wet fingers to smooth the tops evenly and/ or add additional chopped strawberries. Spray some oil or light swipe of butter on top just to help crisp.

  • Bake for 16-18 minutes, rotating pan halfway through baking. Cool in the muffin pan for 5 minutes before turning out onto a wire rack to cool completely.
