Cauliflower Meatloaf

INGREDIENTS

Meatloaf

  • 1 lb grassfed ground meat (or substitute)

  • 2 cups grated cauliflower

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • ¼ cup fresh parsley, chopped

  • 3 tbsp Dijon mustard

  • 2 large eggs

  • 2 tbsp dried oregano

  • 1 tbsp dried thyme

  • 1 tbsp onion powder

  • 1 tsp Himalayan salt

  • 1 tsp freshly cracked black pepper

  • 1 tsp ground coriander

  • 1/2 c (to 1 cup) BBQ sauce (recipe option below)

  • Butter and Grated parmesan (to coat pan)

  • ketchup (as condiment)

BBQ Sauce (or just purchase)

  • 1 small can tomato paste

  • 2 tbsp apple cider vinegar

  • 2 tbsp Dijon mustard

  • 1 tbsp blackstrap molasses

  • 1 clove garlic, minced

  • 1 tsp onion powder

  • 1 tsp Himalayan salt

  • 1 tsp freshly cracked black pepper

  • 1 tsp smoked paprika

  • ½ tsp chipotle powder

  • ½ tsp chili pepper flakes

  • ¼ tsp ground white pepper

  • ¼ tsp ground ginger

  • ¼ tsp ground Ceylon cinnamon

  • ⅛ tsp ground clove

INSTRUCTIONS

  1. Preheat the oven to 375F. While preheating oven, chop veggies, and lightly sauté for added char. To make the cauli rice, chop a head of cauli, blend with water, and wring out to dry. Lay out flat on a pan in the oven to let dry out while oven preheats, maybe 5 to 10 min.

  2. If making own bbq sauce, mix all the ingredients and stir well.

  3. In a large mixing bowl, add all the ingredients for the meatloaf, including half of the BBQ sauce that you just made and knead well with your hands until all the ingredients are well combined.

  4. Transfer the meat mixture to a loaf pan (I used a double dish, buttered the pan, and lightly coated the butter with grated parm so it doesn’t stick). Press it down and shape the top so it looks nice and round.

  5. Spread the rest of the BBQ sauce evenly all over the top and then place your meatloaf in the oven. If your meatloaf hangs above the top edge of the pan, place a broiler pan or large piece of aluminum foil directly underneath to collect the drippings that will leak out.

  6. Bake for a total of 1.5 hours at 375F.

  7. Remove the meatloaf from the oven (insert toothpick to ensure done) and let it rest for at least 20 minutes before serving.

  8. Garnish with fresh parsley and extra-virgin olive oil, and ketchup, if desired.
